Roasted Onion-Garlic Green Beans
Cancer fighting properties:
Think garlic and onions and the other allium vegetables are just for great flavor? Think again—they are super nutritious as well! Garlic and onions contain cancer-fighting phytochemicals called organosulfur compounds. These foods are considered to be anti-inflammatory and are associated with decreased risk of certain cancers (particularly colorectal cancer!), heart disease, and high blood pressure. To get the most phytochemical benefit from your allium foods, chop then and let them sit for about 10 minutes before cooking.
Ingredients:
(approximately) 2 lb green beans, ends trimmed off
1 medium Spanish onion, finely diced or minced
1-2 cloves garlic, minced
2 teaspoons kosher salt
½ teaspoon black pepper
1-3 Tablespoons olive oil (you can even use less if you're dieting)
Cooking Directions:
- Preheat the oven to 450°. Line a baking sheet with parchment paper and set aside.
- Combine all ingredients in a large bowl, tossing well to evenly distribute everything.
- Spread the mixture on the prepared baking sheet in as close to a single layer as possible.
- Bake at 450° for 30-40 minutes (depending on how well done you like your green beans). Stir halfway through. Serve hot, and enjoy!
