Nutrition During Head and Neck Cancer Treatment: Super-Eggy Scrambled Eggs
This scrambled egg recipe is an excellent source of soft protein. It can be used as a base for experimenting with different tastes by adding herbs and spices or increase protein by adding cheese.
Ingredients:
- 1 tablespoon heavy cream
- 3 large eggs
- 2 large egg yolks
- 2 tablespoons butter or oil of choice
- Salt to taste
Instructions:
1. Whisk the eggs, yolks, and cream until combined.
2. In a large skillet over medium heat, add the butter or oil. Add the eggs and stir gently with a spatula. Fold the eggs from the bottom of the pan until the eggs are cooked to your liking.
3. Serve warm, add cheese or fresh herbs (optional)
