Scallion Crusted Arctic Char

Looking for another way to incorporate omega 3 fats into your diet, try arctic char. Nothing could be easier than stirring together chopped scallions with a dollop of mayonnaise, and this quick coating adds considerable verve and oniony bite to meaty arctic char fillets.

Serve this with garlic sautéed kale and baked sweet potatoes for a cancer-fighting feast!

Serves:  2 (1 6oz filet each)

Per Serving:  288 calories, 37 grams protein, 13 grams fat (2.4 grams omega 3 fats), 7 grams carbohydrate, 140 mg sodium (or more if salt is seasoned).

Ingredients:

4 to 6 Scallions (green onion)

1 tablespoon mayonnaise

2 (6 ounce) pieces of arctic chart fillet

Cooking Directions:

  1. Preheat broiler. Line rack of broiler pan with foil.
  2. Finely chop scallions and stir together with mayonnaise. Pat fillets dry. Place fillets, skin sides down, on broiler pan and season each fillet with salt and pepper. Spread scallion mixture evenly over tops of fillets.
  3. Broil 3 to 4 inches from heat until scallions are slightly charred and fish is just cooked through, about 8 minutes.
