This chunky gazpacho resembles salsa and can be eaten with corn chips, baked whole wheat tortilla's, pita bread or simply as a cold soup. 2 celery stalks with leaves, chopped
2 avocadoes, chopped into large chunks

2-3 Anaheim chilies, roasted with skin and seeds removed once cooled, diced
