This chunky gazpacho resembles salsa and can be eaten with corn chips, baked whole wheat tortilla's, pita bread or simply as a cold soup. It's packed with vitamin C, vitamin A, vitamin E, folate, fiber, potassium and more. At around 50 calories per cup, you can't beat this fresh dish. Feel free to experiment with different ingredients!
Per Serving (1 cup): 50 Calories
6 tomatoes, diced or 1- 28 oz + 1- 15oz cans diced tomatoes (no salt added)
2 celery stalks with leaves, chopped
2 avocadoes, chopped into large chunks
Sea salt and freshly ground cracked pepper to taste
2-3 Anaheim chilies, roasted with skin and seeds removed once cooled, diced
1 red onion, diced
3 garlic cloves, minced
1 bunch of cilantro, chopped
Mix all ingredients together and enjoy.
