What Is a Gluten Free Diet?
When you have celiac disease, consuming foods with gluten (a protein found in wheat, barley and rye) triggers a series of reactions that cause inflammation in your body. This can eventually damage your small intestine and lead to serious health conditions, including malabsorption (the inability to absorb certain sugars, fats, proteins or vitamins from food).
There are no medications or surgeries to cure celiac disease. The only treatment is a lifelong commitment to eating a gluten free diet. Avoiding gluten helps the lining of your small intestine heal, so you can efficiently absorb nutrients from the foods you eat.
Adopting a gluten free diet includes eating a variety of delicious and healthy foods and avoiding even small amounts of gluten. This may include:
- Plenty of fresh fruits and vegetables
- Healthy proteins such as lean meat, fish, dairy and nuts
- Consuming allowed grains and flours such as rice, corn and soy
- Avoiding grains with gluten such as wheat, rye, barley and triticale
- Keeping a careful watch over allowed grains in moderation, such as gluten-free oats
- Distilled alcoholic beverages (wine and vodka) and vinegars
- Eating pre-packaged gluten free foods, such as crackers and frozen dinners, in moderation
